Sooji Ka halwa is a quick and easy dessert that can be prepared with simple ingredients that one generally has in the pantry.

Sooji ki loz

It is made by roasting sooji (semolina) in oil, then adding sugar, milk, water and nuts. There are two variations on the basic recipe, the more typical one has a higher quantity of liquid which results in a more halwa like consistency (think very thick oatmeal) that you can eat with a spoon or a puri or paratha.  But the one we are making is dryer consistency which will be cut in diamond shapes like fudge.  Some call this sooji ki barfi or suji ki katli or rava barfi but in my family we call it sooji ki loz. 

Instructions

Step 1 – Fry the Dry Fruits

 1/4 c raisins

 1/4 c shredded coconut

 1/4 c blanched slivered almonds 

 1 tsp oil

Heat oil in a pan and fry almonds until they become golden brown, remove them from pan.  Then add raisins to the pan until they plump up, remove raisins from the oil.  Add coconut to the pan and quickly roast it until light golden brown, remove it before it gets dark because it does burn quickly.  

Step 2 – Cook Halwa

2 oz oil

2 oz butter

4 cardamon

2 cups sooji (fine rava, semolina)

1 1/8 c sugar

1 egg

1/4 c milk + 1 tbsp milk with a pinch of saffron

Add cardamon and oil to the pan and then add sooji and roast it for 15 minutes stirring continuously so that it does not burn on medium low heat.  Microwave milk with saffron for 1 minute.  Add sugar to sooji mixture and then add hot milk with the beaten egg.  Keep stirring quickly so that it doesn’t lump up.  The mixture will come together and leave the sides of the pan, now add the raisins, coconut and almonds.  Cook for 2 minutes and then take out on a cookie tray, spread it with a rolling pin until it ¼” thick and cut into diamond shapes.
