Seekh kababs are named because traditionally they were made on seekhs (skewers) and grilled over coals.

… As the skewer heated up the kababs were cooked quickly both internally and externally.When I started making seekh kababs I make them on a skewer on the back of a long wooden spoon and would then cook then, eventually I got tired of the extra step and realized that I could make life easy and skip it, so I just started shaping them. But for the people who want to do it right, you got to shape them over a skewer. They are made with minced or ground meat. Any type of meat can be used, but in our cooking, beef is more typical but in my home we generally make chicken kababs. Again, there are many variations of seekh kababs, such as malai kabab and Bihari kabab, but today we will make simple seekh kababs..
Instructions
Ingredients:
1 lb. ground meat
1 slice of bread for any ground meat (1/3 cup bread crumbs)
1.5 slice of bread for chicken (1/2 cup bread crumbs)
1 onion chopped
1 onion fried or ½ cup of ready-fried onions
1 tbsp ginger
1 tbsp garlic
2 tsp tikka masala
1/2 tsp salt
1 tsp garam masala
1 green pepper (jalapeno, serrano)
Handful Cilantro
Step 1
Grind everything together, except the meat and cilantro. Add the meat and cilantro and just mix it together. Shape into kababs. Bake at 350 for 15-20 minutes, flip them over and bake for additional 10-15 minutes
