I use multiple things for tenderizing different cuts of meats or kababs but my natural favorite is raw or green papaya.

… Raw papaya is tasteless so it a good choice for marinating meats, you can also use ripe papaya but since it is sweet it tends to change the flavor of the meat. To prepare the green papaya mixture, you don’t even need to peel it just scope out the seeds, add few tablespoons of water and puree it. Once pureed, I just freeze the mixture in ice cube trays, that way I always have cubes of raw papaya in the freezer to use in the recipes.
