Baigan Ka Bhurta

Also called Baigan ka Bharta, it is a vegetarian dish prepared with roasted and mashed eggplant.

…The smokiness of the roasted eggplant adds a special taste to the dish. It is a popular dish in India/Pakistan and depending on the region it has some variations. It is prepared with roasting the eggplant and then scooping out the flesh and then cooking it with onions, or tomatoes or both onions and tomatoes. It would traditionally be eaten with chappati or tortilla. Another variation is to add it with yogurt and to use it as raita (condiment)
Instructions
Ingredients:
2 lbs eggplant
Cooking spray or oil for drizzling
1 onion finely sliced
4 tbsp oil
1 tsp cumin
1 tbsp ginger
1 tbsp garlic
1/2 lbs tomatoes (grind – not necessary but looks nicer)
1/4 tsp turmeric
1/3 tsp red pepper
1 tsp salt
Cilantro for garnish
Step 1: Roast the eggplant
Halve the eggplant and lay it cut side down on an oiled baking tray. Heat the oven to 375 and roast the eggplant for 30 minutes. Once the eggplant has cooled remove the skin and mash or grind the eggplant
Step 2: Cook the eggplant
Fry the onions golden brown in oil. Add cumin and stir fry until fragrant. Add the ginger and garlic and stir fry for couple of minutes. Add the tomatoes, red pepper and turmeric. Once the tomatoes break down add the eggplant and cook for 15 minutes.
